Project Abstract

The primary objective of this project is to turn �zero-value� potato and carrot waste into a food fibre with a potential market value of �3-5/kg. For a medium sized Irish potato and carrot processor producing 780,000 kg (dry wt) of potato and carrot waste per year this potential value is significant. New knowledge generated in this project will be relevant not only to potato and carrot wastes but also to other agri-food waste streams within (i) Ireland, (ii) Europe and global. CyberColloids will strive to disseminate the project findings through reports, updates and a demonstration workshop to industry stakeholders.
